Last week I was asked to make a corn dish for the monthy “forever young” dinner at church. The theme for the dinner was, corny joke night. The tables were decorated beautifully with fresh corn on the cob and lottle bags of flavored pop corn. The best part was, every attendee was asked to bring a corny joke to share with the group. It was just a fun night all the way around! When they asked me if I could come up with a corn dish to serve 180 people I knew exactly what to do, Cheesy Corn Cassarole!

Now, if you are watching your carb intake, this dish is probably not for you, but if you’re looking for an easy to make comfort food that everyone will love….this is it! It’s a perfect potluck dish that can be made the night before and then popped in the oven an hour before your event. It would also make a great side dish for thanksgiving dinner

Cheesy Corn Casserole

1 can of whole kernel corn, drained (11oz)
1 can of cream corn (11oz.)
1 8 oz. container of sour cream
1 egg
1 8.5 oz. box jiffy cornbread mix
1 small onion finely chopped
1 cup shredded Cheddar cheese

Preheat oven to 350
Grease a 9×13 baking dish
In a large mixing bowl combine the above ingredients
Mix well and pour into prepared dish
Bake in preheated oven for 45-50 minutes until set
